Homemade

2 x 16 inch Plain Cheese NY style pizzas

2 of the best New York pizzas I've ever made. Used The Dough Guys recipe. Definitely a good one to try.

Little Ms Nicecalf (22mo) demolished 2 entire slices. Mrs. Nicecow and I had 3 slices each, so we have a full 16 inch pizza pre-sliced in the freezer for next time we want a pizza night.

The Dough Guys recipe is 100% flour, 62% hydration, 0.4% yeast, 2.5% salt, 2% sugar (for colour), and 3% olive oil.

I adapted the baking process to accommodate my home oven; shaped the dough, topped with a half cup of sauce and parbaked for 5 minutes. Pulled out the pizza and topped with cheese and some splodges of sauce on top, before baking again for another 5 - 8 minutes.

Man! Those look good and bubbly!

Still Detroit > NY?

For me, Detroit style is my favourite style. I love the light, airy bread and the frico crust, it just hits the spot for me. But NY style is undeniably amazing.

The Dough Guys recipe seems accurate to the NY style I have had from Deep End and Sal's pizza here in Melbourne.

I didn't follow his sauce recipe though. I prefer my pizza sauce recipe with mutti san-marzano peeled tomatoes, salt, oregano, basil, and a good olive oil. If it needs sweetening, I use honey instead of sugar. My sauce slaps hard imo

“My sauce slaps hard” lollll I bet, and I love the confidence 😂

There's an innuendo in there somewhere lol.

But yeah, generally my favourite pizza style is "the last one I made". I am partial to tavern style too. Which I didn't think I'd like much because I've never been a fan of thin'n'crispy.
