14 Inch Pepperoni Pan Pizza

Last week I made mini pizzas based on a Chicago pan style pizza. Here's their big brother. A 14 inch pepperoni pizza, topped with whipped ricotta and fresh chiffonade basil.

The Chicago pan pizza is so obscure that most Chicagoans don't even realise it's a thing. It was invented by Burt Katz in 1970, a cross between a Chicago deep dish and a Detroit style pizza.

This style was popularized recently on the show "The Bear". Which featured Pequods pizza. This is based on Millie's Pizza in the Pan, rather than Pequods, as I think Millie's is more visually appealing.

How did it taste compared to your other pizza/styles?

I asked my father in law what he thought and he said "it's alright, the breads just a vessel for the toppings eh?"

No sir, it's not. Each style offers a different earring experience and flavour profile. Boomer! 😂

It's very different. The base had a less open crumb than my Detroit style recipe. The base was so light it's almost like a souffle. The sauce was lighter and brighter than my Detroit sauce (I do a cooked sauce for Detroit style, this was uncooked sauce).

Overall we really liked it. I'll definitely be making it again. I know some tweaks I'll make next time; one being that I'll de-pan it and put it back on my steel for a couple of minutes for some more colour on the base

I have two orders today. One for free, the other is paying me $40 AUD.

As I said, when I offer on Facebook noticeboards, I always tell them "free or pay as much as you like/can." Surprised I've only had 2 orders this time. Not complaining, more time to spend with my wife and daughter. Hehe.

The orders are for Detroit style. Pics coming later.

I wonder if people get suspicious of the "Free or pay as much as you like/can" part. At least in the US, I think it would raise some suspicion haha.
