Ok, hear me out on this one. Half carbonara inspired, half chorizo and mango Detroit style
Last February I had an accident that broke my spine in 2 places. When I got out of hospital, my wife had made us a pizza for dinner, she made half carbonara, topped with cheese and diced speck (similar to guanciale), and the other half, chorizo and mango. The carbonara half was topped with egg and cheese mixture as soon as it came out the oven, which gently cooked the egg without scrambling it. The mango half was topped with fresh burrata cheese.
It may sound like a strange combo, but that night, high on extremely strong painkillers, a slice of each really hit the spot.
