Lemon and basil dessert pizza with Mascarpone
This one is a bit different. Living in Australia, Christmas is in the middle of summer, so dense, comforting Christmas pudding isn't exactly ideal. My wife challenged me to make a dessert pizza. This was the result, I made two. My father in law was sceptical at first, but went back for more. This was Neapolitan pizza cooked in under 60 seconds in my Ooni pizza oven.

As for it being summer at Christmas, I've been here 13 years and it still feels weird. Everyone has inflatable snowmen in the garden, playing "the weather outside is frightful, but the fire is so delightful" meanwhile it's blazing sun and 104f outside. Aircon on full blast sat in my boxer shorts 😂
