Ran out of the correct size boxes for the Hawaiian, so had to use the next size up. The pepperoni was finished with Parmesan after these pics were taken.
6 mini pan pizzas for the family. 2 x pepperoni & hot honey, 1 x Aussie (ham and egg), 1 x chicken, ham & pineapple, 1 x ham, 1 x ham, chicken, jalapeno and pineapple. The base is my own recipe, 70% hydration dough. The cheese was whole milk, low moisture mozzarella.
Last week I made mini pizzas based on a Chicago pan style pizza. Here's their big brother. A 14 inch pepperoni pizza, topped with whipped ricotta and fresh chiffonade basil.
This one is a bit different. Living in Australia, Christmas is in the middle of summer, so dense, comforting Christmas pudding isn't exactly ideal. My wife challenged me to make a dessert pizza. This was the result, I made two.

Last February I had an accident that broke my spine in 2 places. When I got out of hospital, my wife had made us a pizza for dinner, she made half carbonara, topped with cheese and diced speck (similar to guanciale), and the other half, chorizo and mango.

I personally hate it because it doesn't belong on pizza for a lot of reasons that I know you've likely heard by now. But I want to know an interesting opinion on pineapple pizza or an interesting why.

These were taken earlier this year. Had my in-laws over for a pizza night. They'd never tried Tavern style before. They loved em. 1x plain cheese, 1 x Margherita, & 1 x spicy Italian sausage with whipped ricotta!
