Washing your meat is a throwback to before refrigeration. Now all you're doing is splashing harmful bacteria around your sink. Bacteria that would be killed by thermonuclear cooking or via pasteurization (i.e. sous vide). America is pretty much the only country in the world that still practices this.
There could be other contaminants aside from bacteria that washing would take off and you can disinfect the sink after. There have been a lot of food recalls in USA lately due to contaminants.
This video and the subsequent research has been eye opening!! Washing the chicken sounds so obvious but now I'm learning that it's completely wrong?
Is this for all food or just chicken?
You really have to do your research because there is so much the average consumer isnt informed about. For example, in usa whole chicken are often bathed in chlorine. If you dont wash them, you eat the chlorine. The chlorine wash is diluted and is used to control pathogens growing on the surface.
Its not limited to chicken. Each food species faces its own diseases and parasites, and it varies on the farm practices. In the USA, E Coli is most commonly spread in wheat flour and lettuce because they become contaminated and are often eaten raw. Eggs have salmonella issues in the USA because we strip the shells. Beef that is raised in pasture can get all sorts of parasites. You are spreading these pathogens by washing off the food. But you can always clean it with clorox or alcohol and kill most them on the kitchen surfaces. Thats why you clean often.
Well that's something. I didn't realise the chlorine could be removed. In the UK, it comes around every so often that USA is trying to "Force another chicken deal". Literally nobody here wants chicken that's full of chlorine or allegedly pumped full of hormones etc. It's become a bit of a bogey man when it comes to US-UK deals/relations lol.
Wait, so I AM supposed to wash the chicken? I’m so confused because the consensus now seems to be to not wash it over the spread of bacteria.
Or is this specific to the US?
Thats what Im saying but Im always the contrarian 😅
Im just saying if bacteria is the only concern, you can disinfect the kitchen.
The chlorine pack thing is mostly USA, but other concerns like contamination can happen anywhere. You need to have good food safety practices like cleaning the kitchen and washing your hands. I think washing the chicken is a good idea. If the butcher pissed and didnt wash their hands, your chicken could be a vector for hepatitis A and cooking to normal temp would not address this. You’d have to go hotter than well done.
