Had some leftover roasted chicken in the freezer so I sautéed some veggies and threw in pasta and some frozen homemade bone broth with some spices, and tah dah! Dinner is served.

Breaded and roasted Chicken thighs with a Mushroom Marinara and Mozzarella Cheese. with roasted carrots, Brussel sprouts, cherry tomatoes, Kalamata and pimento olives.

Remember when Wendy's was good? I still go once in a while for their chili but that's it. They've really started skimping on quality after the 4 for $4 deal.

Went to a Mexican restaurant for dinner last night. Mrs Nicecow had pork Al Pastor. I had the birria tacos with consumé. Little Ms. Nicecalf had a cheesy quesadilla with Mexican rice. And there was a side serving of "potachos" for us all to share.
