I don’t like Chiapas that much, but this was a really good shop and I’m hoping it’ll change my mind!

I am a Chiapas fan! I love Mexican and Central American coffees. I lived in Colorado, but not near Kaladi. Let me know how it is! ☕️
Ok - so I busted into this today, and I like it better than I like most Chiapas; I find it to be a pretty “light” and “clean” cup, it’s very drinkable, but it almost tastes watery.
To be fair, I didn’t make this pot of coffee; I’m going to put 20g in the aeropress and see if they makes a stronger cup.
